For the growing number of people who eat vegan, a pressure cooker is a blessing when it comes to saving time and enjoying a wider variety of foods on a regular basis. The pressure cooker drastically shortens the cooking times of healthful vegan staples such as dried beans and ancient grains: suddenly hummus from scratch and braised artichokes become weeknight fare.
Jill Nussinow shares a wealth of knowledge and great tasting recipes in her new book.
Jill Nussinow, aka The Veggie Queen, has been teaching people about the joys of eating whole food, plant-based meals for the past 30 years. For more than 25 of them she has been teaching at Santa Rosa Junior College as adjunct chef instructor specializing in vegetarian and vegetable classes. For more than 10 years Jill has taught at the McDougall program (featured in Forks over Knives movie). Jill is a Registered Dietitian who awakens people to vegetable possibilities. She is a cookbook author and freelance writer.
